Saffron Couscous

Ingredients:

2 cups water
½ teaspoon saffron
1 teaspoon extra virgin olive oil
½ teaspoon salt
2 cups couscous
¼ cup raisins
3 tablespoons chopped fresh mint

Procedure:

     In a saucepan, bring two cups of water to boil and add the saffron. Turn off the burner, cover and let stand for 30 minutes. Place in a pan, wait until you are at the boiling point, and mix in the olive oil, salt, couscous and raisins. Remove from heat, cover and let stand for 30 minutes. Top with fresh mint.
