Ingredients:
1 hen
2 ounces chicken broth
3 tomatoes
1 large onion
3 cloves of garlic
4 ounces pinol
1 sprig of cilantro
salt to taste
For Pinol:
Pinol is prepared with the following ingredients:
Ground cornmeal
1 teaspoon ground cumin
1 teaspoon ground black pepper
Achote (optional)
Preparation:
Blend the tomato, onion, cilantro and garlic in a cup of water. In a pressure cooker with water boil the pieces of chicken for 25 minutes and add liquefied ingredients. Add salt and seasoning.
Once cooked, remove from heat. Pinol Dissolve three ounces in a cup of water and add to the mixture. Simmer another 15 minutes.
